Summer Salads

Peas & Orzo Salad

Ingredients

2 cups Orzo

1 cup Peas

1 cup Pasta Sauce

1 tsp Mixed Herbs

½ tsp Crushed Garlic

A dash of Olive Oil

Salt & Pepper to taste

 

Method:

  1. Boil the orzo for 20 minutes or until cooked and strain under cold water.
  2. Boil the peas.
  3. Warm the pasta sauce add the garlic and mixed herbs and sauté for 7 minutes and let it cool.
  4. Mix the orzo and peas together and pour in the pasta sauce and sprinkle with salt and pepper.
  5. Serve cold with BBQ.

 

Tomatoes & Mozzarella Salat

Ingredients

1 cup Cherry Tomatoes

1 cup fresh Mozzarella

½ cup chopped Parsley

½ Lemon Juice

A dash of Olive Oil

Salt & Pepper to taste

 

Method:

  1. Cut the cherry tomatoes into halves and add them to a salad bowl.
  2. Chop the fresh mozzarella into cubes and add them to the tomatoes.
  3. Finely chop the parsley and add to the salad bowl.
  4. Add salt, pepper, lemon, and olive oil and toss the salad evenly together.
  5. Serve cold with BBQ.
