Summer Salads
Peas & Orzo Salad
Ingredients
2 cups Orzo
1 cup Peas
1 cup Pasta Sauce
1 tsp Mixed Herbs
½ tsp Crushed Garlic
A dash of Olive Oil
Salt & Pepper to taste
Method:
- Boil the orzo for 20 minutes or until cooked and strain under cold water.
- Boil the peas.
- Warm the pasta sauce add the garlic and mixed herbs and sauté for 7 minutes and let it cool.
- Mix the orzo and peas together and pour in the pasta sauce and sprinkle with salt and pepper.
- Serve cold with BBQ.
Tomatoes & Mozzarella Salat
Ingredients
1 cup Cherry Tomatoes
1 cup fresh Mozzarella
½ cup chopped Parsley
½ Lemon Juice
A dash of Olive Oil
Salt & Pepper to taste
Method:
- Cut the cherry tomatoes into halves and add them to a salad bowl.
- Chop the fresh mozzarella into cubes and add them to the tomatoes.
- Finely chop the parsley and add to the salad bowl.
- Add salt, pepper, lemon, and olive oil and toss the salad evenly together.
- Serve cold with BBQ.
